Ande ka funda with MIXED VEG EGG BHURJI ..and CLICK and the Recipe Marathon ends

"Today's egg is better than tomorrow's hen"

This proverb has been one savior to me since childhood, dont really remember when did i start having egg, probably sometime when the doc asked mommy to feed me eggs coz i required proteins etc etc, and mommy started feeding us egg, against the wish of elder folks in our house, and since then i got hooked to it. I love eggs in any form, love it completely. There was one stage in my life when i had decided to leave eggs when i complete college, why so , well then the excuse was that thats the only good thing i can prepare for myself when life has nothing good for me :).



Seriuosly, i remember my days in delhi, the food the dibbawalas used to provide used to be horrendous. So the only way i could gulp down those papad like rotis was to pair that waery roti with some yummy egg bhurji. There were days when i used to have 6 eggs a day, 2 eggs in breakfast as omlette, 2 eggs bhurji with lunchn and another two at night. And i never complained, such is my love for egg bhurji. For similar strange reasons, i love the song ande ka funda, have u guys ever paid attension to its funny but mast lyrics,
aao sikhaun tumhe ande ka funda... anda agar na hota .. to murgiyan na hoti .. jo murgiyan na hoti.. to partiyan na hoti.. jo partiyan na hoti.. to ladkiyan na hoti.. jo ladkiyan na hoti .. to ashiqi na hoti...
howzzattt... i love this song for such non sensual lyrics.. its funn..


OK , coming back to the topic, i love bhurji and am sure is a favorite for many, how many varieties do u have it as, i like it the thick types, not fried much, that is the dofter version, sometimes crispy, with frying it till we get granular bhurji, and sometimes with no veggies, and sometimes with loadddds of onions, and sometimes with lots of other veggies too. Do tell me which kind do u like it as, i would love to try the different variations of bhurjee.
So here goes my version of a mixeg veg bhurjee, with lots n lots of vegetables, any random one u like to have, and make sure the quantity of veggies is more than that of the eggs, if you havent had it yet, you are going to love it.


Ingredients:

2 eggs
1 cup onions finely chopped
1/2 cup onions sliced
1/2 cup capsicums
1/4 cup each of yellow and red bell peppers.
1/2 cup finely chopped cabbage
1/2 cup carrot finely chopped
2-3 tsp cumin seeds
1 tsp mustard seeds
3-4 green chillies slit lengthwise
1 tsp chilli pwd
1/2 tsp turmeric pwd
2-3 coriander pwd
1 tsp chat masala
2 tbsp milk


Method:

1. Heat some oil in a pan and add the cumin seeds and let it splutter, once cracked, add the green chillies and all the onions. Saute till the onions r light brown.
2. To this add all the veggies and saute for another 5 minutes
3. Once the vegetables are a little soft add all the spics and cover the container for another five mins and stir occasionally to avoid sticking.
4. By now the veggies woul b done, beat the eggs with the milk seperately and add this to the vegetable mixture, adding milk is to make it soft. Stir continuously to avoid sticking of the egg and consistent cooknig of the bhurjee, you might add some moe oil here if you find it necesary.
5. Goes best with phulka and a simple dal, may be moong dal.


So today the much talked about Recipe Marathon comes to an end. I dont want to believe it, well to be very frank i do, but for some very strange reasons i dont want it to end.
I want it to end because i dont want to be guided by the fact that i have to post everyday, considering the fact how lazy iam , but in these 15 days i made some wondrful frens, with my fellow runners, Siri, Dhivya, Sri, Arundathi, Bhags, lakshmi, Ranji, Divya, Raaga. Life was different in these 15 days, checking d mailbox for new gossip on the group mail, chatting with one of them all the time, somehow this virtual network had brought us all so close, i wont say we are best of frens now, but yes i know them so much more better, they are nomore a blogger profile to me, i know them considerably well, and relate to most of them in a better way, learnt a lot from many of them, and the very thot that from tomorrow it would not be the same , well it makes it all gloomy suddenly.. but life has to go on.. love you folks, it was and will be cherished throughout. Will post a roundup tomorrow or day after with something about my journey through the first marathon. See you all tomorrow.

Coming to burji..it is really delicious and yummy..i love to have this with simple rice and dal or in sandwich:)..

Arey Swat, this bhur looks right out of Dhaba..delllllllicccious...mujhe abbbhi chahiye!! Well I shall surely try this! When in college we used to buy frm one small dhaba which was parceled in a green leaf, too hot n very yummy just for its taste!!And all for five bucks!! Meri yaadien tumhari banayi bhurji dekh, taaza ho gayi! Its a lively song..used to hum it whn song was 'IN'!

I like my bhurji with green bell pepper and some onion... it tastes awesome... I like it a bit crisp and fried.. not too soggy...:) and I have it with bread.. and tomato ketchup.... hmmmmmmm I am already drooling.... :)

I have an egg burji post in draft right now! The burji looks delicious, Swati! There was a time when eggs were being promoted by the govt thru ads on tv & paper & they had the "meri jaan, meri jaan, murgi ke ande" song as the jingle. Reminded me of that! And your ande ke funde song lyrics are so cute- no egg, no love- gotta love the logic leading to that! :)

swati..i was laughing throughout the first half with your ande song!...oh how i remember that one..when I was eating non veg, ande was my best pal too. Of course can think of eating 6..hehehhe..but burji was my most fav item!...I guess if all I ever miss non veg it would be this!..:)..actually I haven't had time to check on the marathoner's 15th post. But now when I realise, it doesn't look like we have stopped..with so many mails to read on daily basis!..heheh...but still it was good!..I could atleast see you guys posting regularly unlike now!
